Dear time of day, dear friends! Do you like cabbage rolls? This is a very tasty, but complex dish that takes a lot of time to prepare.

I love simple recipes, don’t you? Today I will tell you how to make lazy cabbage rolls. They are practically no different in taste from ordinary cabbage rolls, but their preparation will take much less time.

Moreover, the main ingredients are the same in both cooking methods. These are onions, cabbage, carrots and rice. Sometimes garlic, bell peppers and tomatoes are added.

To prepare cabbage rolls correctly, you can make minced pork or a mixture of ground beef and pork. Minced chicken makes a dietary option. In this case, you need to pay special attention to the quality of the minced meat.

If there is a lot of moisture in it, then the cabbage rolls do not hold their shape and fall apart during stewing. It is recommended to make minced meat yourself from fillet or chicken breast.

To make the cabbage rolls more soft, add a little butter to this minced meat, since chicken meat contains little fat.

The following recommendations will also help you in cooking:

  1. Use short grain rice. This will make the dish more juicy.
  2. Minced meat must be of high quality with normal moisture content. Films and cartilage should be removed in advance.
  3. The recipe involves using ingredients in certain proportions, which must be observed. If there is more rice than required, the dish will turn out sticky. If there is a small amount of rice component, the cabbage rolls will turn out a little dry. If there is a large amount of cabbage, the cabbage rolls will not hold their shape.
  4. To make the dish more juicy and aromatic, add fried onions and carrots to the minced meat.
  5. When cooking cabbage rolls in the oven, it is recommended to cover the baking sheet with foil.
  6. Sautéed vegetables can be added to the minced meat after they have cooled. Since the hot mixture will disrupt the consistency.
  7. To make it easier to form cabbage rolls, it is recommended to wet your hands in cold water.
  8. Pour hot sauce over the cabbage rolls, then their top layer will set and they will not lose their shape.

By the way, if you are preparing food from very young cabbage, then you don’t need to stew it first. It goes perfectly with minced chicken. It will work out great if you replace the meat in the recipe.

Suitable for this. They need to be pre-cut and fried.

You can also make a vegetarian version with rice and vegetables.

Do you know that, contrary to popular belief, you should not beat eggs into the meat mixture. This will give the food toughness. What to do if you over-salt the dish? In this case, a little sugar is added.

When preparing cabbage rolls for children, experts recommend not frying the minced meat and vegetables, but simmering them.
The finished dish is served hot. In this case, it needs to be poured with sauce and decorated with herbs.
Don’t forget that delicious cabbage rolls in the form of cutlets can be prepared for future use and then frozen in the refrigerator.

Then you can heat the semi-finished products in a frying pan.

Lazy cabbage rolls, prepared from cabbage, minced meat and rice. You can give them any form at your discretion. Some housewives cook them in the form of large cutlets. And those who are even more eager to reduce cooking time take the necessary ingredients, simply chop them and simmer them in the oven, in a saucepan, in a slow cooker, or in a frying pan.

This dish, for example baked in the oven, has another good advantage compared to the traditional one (with a whole leaf of cabbage). But the fact is that children, although not all of them, do not really like stewed cabbage leaves; they open them, eat the meat filling, and put the leaves aside. There is no need to unwrap anything here, since the cabbage will already be cut into small pieces and it will be almost invisible in the cutlets, which is quite suitable for little capricious children.

  5. Place the minced meat in a bowl and combine with vegetables and rice, add seasonings as needed, in addition beat in the egg and mix the resulting mass thoroughly with your hands. Since this recipe involves making lazy cabbage rolls with minced meat in the oven, after forming the meat balls directly, you need to place them on a baking sheet covered with baking paper.

Therefore, before starting the action, you need to pour boiling water over the vegetables and leave for a couple of minutes, then remove the skin, cut and grind the tomatoes in a blender. 8. Cover lazy cabbage rolls with cabbage and minced meat with sauce, add a little extra water to the baking sheet and cook for the first 20 minutes at 220 degrees, cook for the remaining 30 minutes at 180 degrees.

How to cook lazy cabbage rolls in the oven

Frankly, this was my first time cooking these lazy cabbage rolls in the oven. Before that, in my memory there were only ordinary, classic cabbage rolls. As it turned out, lazy cabbage rolls are much faster and easier: you don’t need to steam the cabbage, remove the leaves from it, or wrap the filling in them. It is these manipulations that take up the lion's share of time when preparing cabbage rolls. Of course, classic cabbage rolls are very tasty, but you don’t always have the time and desire to expend so much effort to prepare your favorite dish. And then it’s the turn of the lazy cabbage rolls in the oven.

Having tried to cook both classic cabbage rolls and lazy cabbage rolls in the oven, I can do a little comparative analysis. The taste and appearance of both dishes are excellent. Of course, there are slight differences in tastes, but they are not to anyone’s advantage, since cabbage rolls are cabbage rolls and they simply cannot but be tasty. Lazy cabbage rolls cook twice as fast as classic ones.

And lazy cabbage rolls in the oven can surprise you with their amazing appearance. These are neat cutlets baked in sauce. In essence, this is the same filling for cabbage rolls, but also with cabbage in its composition. And if you are one of those eaters who, before finishing a cabbage roll, remove the cabbage from it, then this one is especially for you. Although cabbage is present in lazy cabbage rolls, it is practically not felt. It gives the minced meat juiciness, adds spicy notes, but does not spoil the taste of the dish at all, but only makes it even better.

To cook lazy cabbage rolls in the oven, you can use either a baking sheet (this is the case when preparing a large number of lazy cabbage rolls) or a Dutch oven or baking dish. In the first case, lazy cabbage rolls are laid out in one layer and filled with sauce. In the case of a Dutch oven, the lazy cabbage rolls are placed in layers and also covered in sauce. Both methods of baking lazy cabbage rolls in the oven are valid. Lazy cabbage rolls hold their shape perfectly and therefore they will remain intact and neat during baking with the addition of sauce.

Ingredients:

  • 500 g minced meat (pork or beef)
  • 0.3 cups rice
  • 1 large onion
  • 2 handfuls shredded cabbage
  • 2 tablespoons tomato paste
  • 1 tablespoon flour
  • 3 tablespoons breadcrumbs
  • 1 tablespoon sugar
  • 1 teaspoon salt for minced meat and 1 teaspoon salt for sauce
  • ground black pepper (a pinch for the minced meat and the same for the sauce)
  • bay leaf
  • sunflower oil

Lazy cabbage rolls in the oven, step-by-step recipe:

  1. For the preparation of these lazy cabbage rolls, I used pork, about 500 g. A third of a glass of rice should be boiled for 15 minutes in two parts of water. That is, for one third of a glass of rice there are two thirds of a glass of water.
  2. Combine the minced meat with rice boiled until half cooked in a bowl or pan.
  3. Finely chop the cabbage (two handfuls in total), then place it in a saucepan and fill with water. Boil the cabbage for 10 minutes from the moment the water boils, place in a colander and let the water drain.
  4. Add the cabbage to the bowl with the minced meat and rice.
  5. Wet your hands in water and scoop up portions of minced meat. We form it into oblong cutlets, which we bread in breadcrumbs. Add salt (a heaping teaspoon) and ground pepper to the minced meat. Mix the minced meat. Here you should pay attention to the fact that the quality of the minced meat is very important. You should devote at least 3 minutes to this process and knead the minced meat with your hands.
  6. Fry the lazy cabbage rolls in a frying pan with a small amount of sunflower oil. 2-3 minutes on each side, until golden brown.
  7. Preparing sauce for lazy cabbage rolls. In 500 ml of water we dilute two tablespoons of tomato paste, a tablespoon of flour, the same amount of sugar and a teaspoon of salt. We also add ground black pepper and bay leaf. Stir everything well, “breaking up” the flour lumps.
  8. I decided to bake my lazy cabbage rolls on a small baking sheet, so I spread them out on it.
  9. Pour the prepared tomato sauce over the lazy cabbage rolls and place in the oven for 45 minutes. Cook cabbage rolls at a temperature of 180 degrees.
  10. While cooking the lazy cabbage rolls in the oven, they baked, steamed and partially absorbed the delicious tomato sauce, the remains of which thickened slightly (for this purpose we added flour to it).

Juicy lazy cabbage rolls with gravy, stewed in a frying pan

Lazy cabbage rolls, like the classic “full” version, are made from cabbage, minced meat and rice. Only they can take different forms. Some housewives cook them in the form of large cutlets. Others, who are even more eager to protect themselves from cooking, simply chop the ingredients and simmer them in a saucepan/frying pan/multi-cooker (underline as appropriate). There is also an option, described in the joke, when the cabbage is on the balcony and the minced meat is in the refrigerator. 🙂 But we certainly won’t touch it. Let's take the most difficult route and cook lazy cabbage rolls in a frying pan. The recipe with photos describes step by step all the steps - from cutting food to shaping, frying and stewing cabbage rolls. Everything is extremely simple!

For cabbage rolls:

  • minced meat (meat or chicken) - 500 g
  • white cabbage - 400 g
  • white rice - 100 g
  • chicken egg - 1 pc. CO categories
  • vegetable oil - 50-70 ml
  • carrots - 1 pc.
  • onions - 1 pc.
  • garlic - 1-2 cloves
  • salt - 1 tsp. (without slide)
  • fresh herbs - to taste and desire
  • ground pepper - a pinch
  • flour - 2-3 tbsp. l (for breading)

For the sauce:

  • tomato paste or ketchup - 2 tbsp. l.
  • sour cream - 2 tbsp. l.
  • water - 300-400 ml
  • table salt - to taste
  • sugar - as needed

Method for cooking lazy cabbage rolls in a frying pan (simple recipe, described step by step):

  1. Let the rice cook. Suitable for both round and long grain. Rinse it well before cooking. Pay attention to the way rice is processed in production. Steamed cereal retains its shape better, while polished cereal turns into porridge after cooking. Therefore, it is better to take the first one. Fill the rice with water in a ratio of 1 to 1 and place on the stove. Cook over low heat until the liquid has completely evaporated. The rice will be slightly undercooked. But it will become ready while frying and stewing the cabbage rolls.
  2. Prepare the vegetables. Chop the onion into small cubes.
  3. Coarsely grate the carrots or cut into thin strips.
  4. Heat 2-3 tablespoons of oil in a frying pan. Add carrots. Fry over moderately high heat for 2-3 minutes. Stir occasionally to ensure the straws cook evenly.
  5. Add onion. Stir. Cook until the onion becomes translucent.
  6. Lazy cabbage rolls don't turn into cabbage. Therefore, you don’t have to boil a head of cabbage, remove whole leaves from it, and then wrap the meat in envelopes. Everything is much simpler. Remove the top leaves from the fork. Cut about a quarter of it. Chop finely.
  7. Place the cabbage sticks into the pan with the vegetables. Stir. Reduce heat. Simmer under the lid closed for 10-15 minutes. To prevent the vegetables from burning, add a little water or broth to them. The cabbage will not become soft during cooking. But this is not necessary. Vegetables should be half-cooked, as the Italians say - “al dente”. Otherwise, their taste will be practically indistinguishable in the finished cabbage rolls.
  8. For the base of the dish, I used moderately fatty minced pork (there was no other kind in the store). But you can (and even need) to use combined and pure beef or chicken. Lazy cabbage rolls will still turn out juicy and tender due to stewing in a frying pan in tomato sauce. Transfer the minced meat into a deep bowl. Add finely chopped herbs to it (I used parsley). And chopped garlic. You can also take other spices - ground black pepper, a little coriander, mustard, oregano, etc.
  9. Place the stewed vegetables there when they have cooled down a little. Beat in the egg. Add some salt. The minced meat should be slightly salted so that the cabbage rolls do not turn out bland. But don't overdo it. Don't forget the rice. Tip: If the minced meat itself is quite viscous, you don’t need to add the egg. Egg whites can make cabbage rolls tougher.
  10. Stir the mass. Lightly beat on the bottom of the bowl. The base of the cabbage rolls should be viscous and pliable. Form lazy blanks. The form is at your discretion. You can imitate rectangular-rounded classic cabbage rolls. You can make oval cutlets. Round blanks will also work.
  11. Bread them in a small amount of flour. Thanks to it, the cabbage rolls will be covered with a golden crust and will not fall apart in the pan when frying. Flour will also thicken the tomato sauce.
  12. Heat the remaining oil. Place the cabbage rolls to fry. Cook over medium-high heat until golden brown.
  13. Then turn the cabbage rolls over and fry for another couple of minutes.
  14. Prepare a sauce from tomato paste (ketchup), sour cream and warm drinking water. Add a little salt and spices to it (optional). If the paste is sour, add a pinch of sugar. Tip: You can prepare the gravy from fresh tomatoes or tomatoes canned in their own juice. The first ones need to be blanched, peeled and blended with a blender. The second is to simply grind into puree. You can also add finely chopped carrots and onions to the sauce. It is advisable to pre-fry the vegetables in vegetable oil.
  15. Pour the sauce over the cabbage rolls. Cover them with a lid. Simmer over low heat for about 40 minutes.
  16. Remove the lazy cabbage rolls from the pan and place them on plates. Serve with sauce on top.

Bon appetit!

How is my recipe different from all the others? You ask)))

Nothing, in general...

The thing is that I am very lazy by nature... besides, for some time now I don’t like to cook... but I love it, I don’t like it, but I need to feed my family... Yes, it’s tasty and satisfying to feed. Therefore, I try in every possible way to reduce my time at the stove, looking for an opportunity to cook as quickly as possible... and get at least some pleasure from this process, since we all know that you need to cook only in a good mood, since taste directly depends on this quality of any dish.

And lazy cabbage rolls are just one of those dishes that do not take much time, they are easy to prepare, are not particularly expensive in terms of ingredients and are quite tasty. Of course, as for taste - everyone has their own tastes))) ... but my family likes it.

And to cheer myself and you up while cooking, I’ll dance)))

The set of products is standard:

  • Cabbage,
  • Carrot,
  • Ground meat,
  • Salt, pepper, bay leaf, seasonings and herbs to taste and stock from the refrigerator...

How to cook lazy cabbage rolls quickly

If desired, you can add greens, bell peppers, and basically anything to the cabbage rolls))) since cabbage rolls are nothing more than stuffed leaves of a plant (in our case cabbage) with a mixture of vegetables, minced meat and rice... K in a word, you can do without minced meat... Well, lazy cabbage rolls are all of the above, but mixed...

For a family of 6, I take a quarter of a fairly large head of cabbage, one medium carrot and onion, two 400 gram packages of minced meat, plus about a third of a bag of rice. All these products will turn into lazy cabbage rolls in a large frying pan, but you can also do this in a saucepan. And we also need a whole kettle of hot boiled water...

I carry out all the cutting operations in parallel with the preparation of the dish and do it very quickly. THOSE. As follows:

I put a frying pan with a couple of tablespoons of vegetable oil on the stove to warm up (over low heat) (make sure that the oil doesn’t start to burn). At this time, at the tempo of a waltz, cut the onion into cubes and send it to sauté in a frying pan. We grab a large grater in one hand, a carrot in the other, and this is no longer a waltz, but a tap dance...

A quick rub and the carrots go to the onions...
If you have slightly wilted greens, then it’s time to add them to the onions and carrots. Mix everything with one hand... wait until the onions and carrots change color and become more transparent...

…with the second hand we add minced meat
Salt, pepper (ground pepper or hops - suneli) and mix everything in the pan. The minced meat will give a little juice. But I’ll still add a little hot water so that the whole thing doesn’t burn and cover the frying pan with a lid
While the minced meat is stewing a little, it’s time to start working on the cabbage. I cut it as usual, not very finely, not very coarsely, while dancing something like a twist, in such medium-sized sticks.

While I was dancing the twist, the minced meat in the frying pan was partially cooked, that is, it changed color, you can add cabbage
Mix everything again and cover - let it simmer for a couple of minutes.
During this time, the minced meat will be completely boiled, the cabbage will settle a little, and with smooth movements in the rhythm of a tango, I will take out a bay leaf and allspice (peas) from the top shelf of the kitchen wall, and measure out about 1/3 of a pack of rice (less is better than more)

Open the lid, pour rice into the pan and mix it with all the ingredients

Then fill the contents of the frying pan with hot water from the kettle so that the water covers the mixture of minced vegetables and rice a little, no more than a centimeter.

Add a couple of bay leaves, peppercorns, plus salt (we already salted the minced meat, but not the rice)))

Stir lightly again (just to distribute the salt evenly) and that’s it, gas full... Has it boiled? Turn down the gas and cover the frying pan - let it simmer until the water is completely absorbed into the rice...
Now you can relax or do something more interesting than cooking for 15 minutes or just dance to your favorite rhythm.

But don't forget to keep an eye on the pan. There is a risk that the water will quickly absorb and evaporate and the cabbage rolls will begin to burn. And this is not good. It's better to turn them off when there is still moisture at the bottom of the pan. If you cook in a pan, then after turning off the pan, you can remove it from the stove and wrap it up... lazy cabbage rolls will come on their own.

It's time to go to the table!
It doesn’t look particularly presentable, but it’s tasty and I’m not afraid to say that it’s healthy. Because practically nothing in this dish was fried, but rather boiled and stewed. And if such lazy cabbage rolls seem bland to you, then when serving, you can always flavor them with ketchup, pickled cucumber, or, as we like, spicy red cabbage.

Lazy cabbage rolls, unlike regular ones, are easier to prepare due to the fact that the cabbage does not need to be boiled whole, and then there is no need to wrap minced meat in leaves, which is a labor-intensive task and requires quite a bit of time. For lazy cabbage rolls, the cabbage is shredded or chopped, and then added directly to the minced meat. These cabbage rolls are prepared in different ways: in the oven, in a cauldron, in a saucepan or in a slow cooker, sometimes stewed in a frying pan. 2. Finely chop the cabbage and boil in boiling water for 5-7 minutes, adding salt, then drain the water, and when the cabbage has cooled, squeeze out excess liquid with your hands.
  3. Finely chop the onion and carrots and sauté together in a frying pan until soft, add salt.
  4. In a bowl, mix two-thirds of the sauteed vegetables with minced meat, cabbage and spices, add salt to taste.
  5. Add rice, butter and chicken egg, mix the minced meat well until it becomes homogeneous.
  6. If you have time, let the minced meat sit in the refrigerator for 30-60 minutes to cool, this will help the cabbage rolls form better.
  7. Make lazy cabbage rolls, and then place each cabbage roll, one at a time, on a slotted spoon and place in a pan of boiling water. Keep the cabbage roll on a slotted spoon, do not transfer it to the pan. As soon as the cabbage roll changes its color, immediately remove it and use a slotted spoon to transfer the next one to boiling water. This manipulation seals the cabbage roll on top, allowing it to remain juicy inside. It replaces traditional roasting.
  8. Prepare a sauce from sour cream, tomato paste, salt and spices to taste, as well as water. It will be very tasty if you add mushroom seasoning here.
  9. Place the cabbage rolls in a greased baking dish, top with the remaining onions and carrots, and then pour the tomato-sour cream sauce over everything.
  10. Lazy cabbage rolls with sauce are baked in an oven heated to 180-190 degrees for at least 45 minutes. To prevent the cabbage rolls from burning on top, you can cover them with baking paper or foil, and remove it five minutes before they are ready to form a small crust. If necessary, increase the cooking time.
