Preparation:

  1. First, let's make the tartlet dough. To do this, grate soft cheese on a fine grater and mix it with melted butter.
  2. Separate the yolks from the whites. Add the yolks and cream to the future dough and mix well.
  3. Gradually add flour, as they say, as much as the dough takes.
  4. Approximately a glass, but there are eggs larger or smaller and the quantity depends on this.
  5. You should get a dense, soft, creamy ball of dough, which you will place in the refrigerator for an hour.
  6. Prepare the filling: finely grate the sharp cheese and mix with cottage cheese, egg whites and semolina.
  7. Grease small muffin tins or special ones for tartlets with a little vegetable oil and very thinly spread the dough into the tin with your fingers.
  8. Be sure to poke the dough in several places in the pan with a fork to avoid any bubbles.
  9. Additionally, you can place paper muffin cups inside on top of the dough and fill them with dry legumes. This will leave more space for the filling.
  10. Place in the oven at 180 degrees for 10 minutes so that the dough sticks.
  11. Take out the unbaked tartlets, remove the peas from them, and fill with the prepared filling, sprinkle with sesame seeds. Place in the oven again for 10 minutes.

Small tartlets with caviar and red fish

This recipe combines two different fish delicacies. Red fish fillets, such as salmon and red caviar. This is a very rich, beautiful and truly festive dish. A snack for a good mood, because delicious food definitely improves your mood. Tartlets with caviar and salmon will not leave anyone indifferent.

Ingredients:

  • tartlets - 8-10 pcs,
  • salmon fillet - 100 grams,
  • red caviar - 100 grams,

Preparation:

  • 2-3 cloves of garlic,
  • 1 large tomato,
  • 2 chicken eggs,
  • 8 tartlets,
  • 3-4 sprigs of fresh parsley,
  • 1 pinch of salt,
  • 1 pinch ground black pepper,
  • 2-3 tbsp. sour cream (mayonnaise).

Cooking method:

  1. Hard cheese needs to be grated on a fine grater. The type of cheese does not really matter; you can use sweeter, saltier or bland cheese, with spices, herbs or nuts.
  2. Wash a large fresh tomato and cut into small cubes. You can first peel the tomato by scalding it with boiling water.
  3. Remove the husks from the garlic cloves and chop them in any convenient way - pass through a press or finely chop.
  4. Boil chicken eggs hard in salted water, cool and peel, then grate the yolks and whites on a fine grater and place in a bowl.
  5. Rinse the greens and finely chop them, place them in a bowl, add salt, and add ground black pepper or other spices. Season everything with sour cream or mayonnaise, mix - the filling for the tartlets is ready.

Ingredients:

  • Salted red fish – 200 g
  • Eggs – 2 pcs.
  • Curd cheese – ½ pack
  • Cucumber – 1 pc.

  • Tartlets – 20 pcs.

Cooking method:

  1. Start cooking with the filling. For this appetizer, you can use any red fish - salmon, trout, chum salmon. You can also use fish tails to make the snack more economical. Peel the fish and cut into small cubes.

Ingredients:

  • Puff pastry (thawed) 400 grams (1 sheet)
  • Shrimp (large, boiled) 200 grams
  • Garlic 2 cloves
  • Olive oil 3 tablespoons
  • Soft cream cheese (without fillers) 250 grams
  • Olives (chopped) 10 pieces
  • Chicken egg 1 piece
  • Dried dill 1 tablespoon
  • Concentrated lemon juice to taste
  • Seafood spice mix to taste
  • Sifted wheat flour 1 tablespoon

Cooking method:

  1. We take boiled shrimp, peel them from shells and heads, and leave the tails. Then put a frying pan on medium heat and pour a couple of tablespoons of olive oil into it.
  2. When it is hot, add the peeled garlic cloves and fry them for two minutes, allowing them to release their aroma.
  3. After this, remove them using a kitchen spatula and place the prepared shrimp in the frying pan.
  4. Fry the seafood on both sides for 2 - 3 minutes on each, transfer them to a paper kitchen towel, previously placed on the countertop, and cool. Place the pan to the side, do not drain the oil, you will need it later.
  5. Meanwhile, turn on and preheat the oven to 200 degrees Celsius. After this, using a baking brush, grease the muffin tin wells with the remaining olive oil and begin preparing the filling.
  6. Separate 12 - 14 pieces from the cooled shrimp, set them aside, and remove the tails from the rest, finely chop their meat and place in a bowl along with cream cheese.
  7. There we also put a mixture of spices for seafood, dried dill, chopped olives, a little concentrated lemon juice, 2 - 3 teaspoons of garlic oil (from shrimp), a raw chicken egg and mix all the ingredients of the filling with a tablespoon until smooth.
  8. Now sprinkle the countertop with a thin layer of wheat flour, place a sheet of defrosted puff pastry on it and lightly roll it out with a rolling pin to form an even rectangle up to 7 millimeters thick.
  9. Then we proceed as desired: either cut the semi-finished flour product into 12 - 14 squares of equal size, or use a cookie cutter to squeeze out the same number of circles.
  10. Place them in the cells of the mold, pressing lightly with your fingers, and prick them with a fork so that the dough does not swell during baking. After this, distribute the filling over the still raw tartlets and place the pan in a preheated oven for 25 minutes.
  11. After the required time has passed, we put oven mitts on our hands, take the almost finished dish out of the oven and place it on a cutting board that was previously placed on the kitchen table.
  12. Let the tartlets cool a little. Then carefully remove them from the cells, transfer them to a large flat dish and, while they are still warm and soft, place one fried shrimp in the center of each.
  13. Once fully cooked, shrimp tartlets are cooled to room temperature and served as an appetizer. If desired, they can be served on lettuce leaves along with fresh vegetables. The taste of this dish cannot be described in one word; the delicate spicy filling and crispy, aromatic dough beckon to you, promising the desired moments of pleasure.

Mini tartlets with red fish

Ingredients:

  • puff pastry (yeast-free is used in the recipe) - 500 grams;
  • red fish - 150 grams;
  • cream cheese or soft cottage cheese - 200 grams;
  • dill greens - to taste;
  • garlic - 1 clove;
  • salt - to taste;
  • spices - to taste.

Cooking method:

  1. The quantities and weights of ingredients listed for this recipe are based on twelve servings of tartlets. So if you need a larger or smaller number of servings, you can safely vary the “dosage” of the ingredients.
  2. Tartlets are a very common culinary tool nowadays for beautifully serving cold appetizers or sweet desserts. They are usually bought in culinary stores, and they are usually made from shortcrust pastry, which not everyone likes. In our video recipe, we suggest baking these tartlets from puff pastry, prepared at home or purchased in a store.
  3. To make 12 tartlets, half a kilogram of puff pastry is enough. The sheet of such dough is not rolled out, but the bottoms for tartlets are cut directly from it using a round metal cutter. If such cutting is not at hand on the farm, then this can be done using a glass with thin walls.
  4. In 6 out of 12 blanks, using another cutting, additional bottoms are made, leaving rims at least 0.5 millimeters thick, which will become the sides of the tartlets when they are baked in the oven. The remaining excess bottoms can either be rolled out again to increase the number of tartlets, or baked into shortcakes.
  5. Immediately place the resulting bottoms on a baking sheet lined with baking paper, prick them over the entire surface with a sharp fork so that they do not bubble during baking, and brush with raw egg using a brush. Then place the headbands on them, pressing slightly to connect them, and coat them with raw egg as well. Place the baking sheet in the oven, preheated to +200 C and make sure that they brown, which signals their readiness. Allow the finished tartlets to cool, and during this time prepare a filling that suits your creative idea, even a sweet one with berries or fruits.
  6. In our case, this is red fish, cream cheese or fatty soft cottage cheese, garlic, chopped dill and spices, from which a filling mixture is prepared with the chopped fish left over from the production of decorative roses using a spoon to soften and mix the components. The well-mixed filling is placed in a piping bag fitted with a nice serrated 1H nozzle. If you don’t have such a bag, you can get by with a plastic bag with a corner cut off or simply spoon out the dressing mixture with a teaspoon.
  7. At this point, you need to cut the red fish into thin longitudinal ribbons so that two strips can be folded into red fish roses to decorate the tartlet canapé, which are inserted into the recess in the center of the dressing mass. At the same time, spread the petals beautifully in the form of a rose. The resulting tartlets are so attractive and mouth-watering that both eyes and hands will be drawn to them first at a festive feast.

Small tartlets with avocado and salmon

Ingredients:

  • 10-15 tartlets (I have ready-made ones);
  • 1 ripe avocado;
  • 100 g soft processed cheese (which can be spread);
  • 2 tbsp. l. sour cream or mayonnaise;
  • 80 g lightly salted salmon (+ for decoration);
  • ground salt and pepper - to taste;
  • greens for decoration.

Cooking method:

  1. Cut the avocado in half lengthwise, remove the pit. Make cuts and use a teaspoon to scoop out the pulp, which you then cut into small pieces.
  2. Place the avocado in a blender bowl. Add mayonnaise (or sour cream), melted cheese, salt (optional), pepper (at this stage you can immediately add salmon, but I added it later). Beat with a blender into a homogeneous mass.
  3. Add salmon, cut into small pieces, beat.
  4. Place the mixture in a plastic bag (if you don’t have a special device), make a very small cut on the corner so that you can squeeze the mixture out later.
  5. Fill tartlets with avocado and salmon mousse.
  6. Decorate the finished tartlets with a piece of salmon and herbs. You can serve delicious tartlets with avocado and salmon. A tasty, beautiful and original snack you and your guests will definitely enjoy.

Small baked tartlets

Ingredients:

  • chicken fillet - 300 g;
  • fresh champignons - 200 g;
  • cheese - about 100 g;
  • vegetable oil - 2-3 tbsp. spoons;
  • tartlets - 15-20 pcs.;
  • salt, pepper - to taste.
  • sour cream - 250 g;
  • flour - 1 tbsp. spoon;
  • milk - 250 ml;
  • butter - 40 g.

Cooking method:

  1. Cut the washed champignons into thin slices and place them in a large frying pan with vegetable oil. Fry over moderate heat, stirring occasionally.
  2. As soon as all the moisture released by the mushrooms has evaporated, remove the pan from the stove. Cool the pre-boiled chicken fillet, cut into strips or separate into fibers by hand and add to the champignons. Sprinkle the mixture of ingredients with salt, ground pepper and mix thoroughly.
  3. Melt the stick of butter until smooth over low heat. Gradually add flour to the liquid butter mixture, vigorously stirring the mixture with a whisk.
  4. Bring the butter-flour mixture to a boil. Next, pour in the cooled milk. Keep working with the whisk to avoid the formation of flour lumps. As soon as the milk boils, remove the almost finished julienne sauce from the heat and cool until warm.
  5. Next, add sour cream to the milk mass and mix the mass until smooth.
  6. Divide the mixture of champignons and chicken into tartlets.
  7. Pour generous amounts of sour cream sauce over each piece. We try to distribute the gravy evenly so that all julienne tartlets turn out tasty and juicy, and not dry.
  8. Grate the cheese with fine shavings and sprinkle each portion of the future snack. Place the julienne in tartlets into a hot oven. Bake at 180 degrees for about 15 minutes. As soon as the cheese is well melted and slightly browned, remove the finished snack from the oven.
  9. Serve julienne in tartlets with mushrooms and chicken hot or at least warm. A successful accompaniment to the appetizer will be fresh vegetables and herbs.

Small avocado tartlets

This dish alone is enough to experience the vivid taste impressions it gives for a long time. It's just fireworks of taste!

Ingredients:

  • Avocado – 100 g
  • Cilantro – 15 g
  • Garlic – 1 small clove
  • Sweet chilli sause – 30 g
  • Peeled tiger shrimps – 100 g
  • Dry white wine – 30 g

What to consider when choosing a filling recipe

First of all, keep in mind that tartlets come in different sizes. The smallest ones are focused on serving caviar and gourmet cheeses. The larger ones are intended for cold appetizers, pates and salads. In the largest ones, it is customary to bake and serve hot snacks, for example, julienne.

Also note that different types of dough are used for the baskets. Shortbread, fresh, waffle, cheese and puff pastry. Puff pastry is more tender, but it quickly gets soaked and loses its shape, so it is recommended for dry fillings.

Tartlets, especially those made from waffle and thin puff pastry, should be eaten immediately. Delicious recipes for the holiday table

Festive salads in tartlets are not only beautiful and convenient, but also economical - the food consumption is small, but the table looks rich and plentiful.

From red fish. Cut 200 g of red salted fish into long slices, chop four boiled eggs with bright yolks and 100 g of canned pineapple. Mix with high-quality mayonnaise, add 30 g of red caviar and stir gently again. Place into portioned baskets. Sprinkle with good grated cheese and garnish with red caviar. You can use olives and black olives for variety.

Beef. Boil the meat, preferably beef, and separate it into fibers. Roast the walnuts and chop them. Crush the garlic clove. Season with good mayonnaise.

Cold cuts. Boil a small beef or veal tongue (need 300 g), 300 g beef pulp, 250 g chicken fillet. Cool everything and cut into nice strips. Also cut 200 g of Tambov ham, one pickled and fresh cucumber, two medium-sized firm pears. Squeeze the juice of half a lemon and mix it with finely grated zest and chopped leaves of a bunch of fresh tarragon. Add mayonnaise for a delicious sauce. Season the cold cuts, leave for two hours and serve in portioned tartlets.

Chicken with tongue. Boil 500 g of chicken fillet and beef tongue, chop finely. Grate 150 g of good cheese, mix everything, season with mayonnaise. Garnish with olives and grapes.

Shrimp with cheese. Boil the shrimp and peel them. Grind half the shrimp in a blender along with pieces of cheese (take the products in equal proportions) and garlic to taste, dilute with mayonnaise. Place the filling into tartlets, garnish with whole shrimp and herbs.

Shrimp with Dor Blue. Melt 250 g of blue cheese pieces in a frying pan, stirring constantly so as not to burn. Add 20 ml lemon juice, chopped garlic clove and 500 g peeled boiled shrimp. Simmer and pour in some dry white wine. Warm up, let cool and fill snack baskets.

There is not always money for delicacies, but every housewife wants to set the festive table effectively and elegantly. Use affordable fillings for tartlets from inexpensive products - in any case, the end result will be an elegant snack.

  • Take 100 g of green peas, tomatoes and canned sardines (in oil or in natural filling), one egg, 80 g of mayonnaise and 20 g of mustard. Mix the fish with chopped egg, peas, add mayonnaise, mustard and spices. Garnish with tomato slices or something else if you don't have fresh vegetables.
  • Grind the dill in a blender or with a knife, add it to soft curd cheese or cottage cheese, grind, salt, use your favorite spices and wig for color. This filling is suitable for small caviar tartlets, including puff pastries. It can be squeezed out through the large nozzle of a pastry syringe.

  • Mash a jar of cod liver (drain the oil in advance), grate two hard-boiled eggs and finely chop two small pickled cucumbers. Combine everything, add green or onions, previously pickled in vinegar, diluted in equal proportions with water. Mix everything and season with mayonnaise.
  • Grate 100 g of hard cheese (even inexpensive processed cheese will do, but not soft), two boiled eggs, small raw carrots. Mix everything into a single mass with mayonnaise and add a couple of cloves of crushed garlic. Decorate with grated yolk.

  • Divide into fibers or chop cold smoked pink salmon or mackerel into cubes, finely chop fresh cucumber. Prepare a sauce from sour cream and mayonnaise (a tablespoon each) and a teaspoon of mustard. Season the mixture and spread the filling among the tartlets.
  • Boil 300 g of chicken liver, cool and grate on a coarse grater. Fry 300 g of champignons, 150 g of onion and 150 g of grated carrots. From the cooled ingredients, prepare a hearty filling for liver tartlets, adding mayonnaise and ground pepper. Decorate the baskets with herbs and green peas. You can sprinkle with grated cheese or yolk.

Don’t be afraid to experiment, you can use almost any salad, including the signature Olivier salad, the popular herring under a fur coat and a quick salad of crab sticks, eggs and corn.

Cold snacks in baskets as an alternative to sandwiches

Simple and tasty fillings for tartlets can be found in holiday sandwich recipes. This option will surprise guests and decorate even a table with a minimal assortment of dishes.

  • Place a piece of butter on the bottom of a small tartlet, a beautifully wrapped slice of salmon on top, decorate the joint with soft cheese squeezed out of a syringe and herbs.
  • Fill the basket with soft mascarpone cheese and make a cap of red caviar, garnish with a sprig of curly parsley. If you don’t have mascopone, grate hard cheese and mix with sour cream (two tablespoons of thick, fatty sour cream per 100 g of cheese).
  • Grate the boiled beets, add garlic and a little mayonnaise. Fill 2/3 of the basket with the bright mixture, place rolls of thin strips of lightly salted herring on top, garnish with olives and herbs.
  • Grate the processed cheese, mix it with grated garlic and mayonnaise. Fill half the tartlet with the mixture, then fill it with grated egg and mayonnaise, and top it with a beautiful sprat. Decorate with greens.

Pates and pastes in original presentation

Pates are an ideal and simple filling for tartlets; you can take almost any recipe - pastes made from liver, fish, meat, chicken, and vegetables are suitable.

From chicken liver. Fry (or boil if you don’t eat fried) 500 g of chicken liver, two onions and two grated carrots. Grind everything in a meat grinder or blender. Add 50 g of softened butter to the mixture, and if you boiled the liver, 100 g of butter. Stir the pate well, add basil, black and red pepper. Divide into portions.

Meat with liver. Boil 300 g of pork pulp and 300 g of pork liver. Boil 100 g of rice in salted water. Fry the onion in butter with added vegetable oil. Grind meat with vegetables and rice in a blender. Add spices and use as a filling for snack tartlets.

Chicken with mushrooms. Boil chicken breast, fry 200 g of champignons with onions, grate 100 g of hard cheese. Grind the chicken and mushrooms in a blender, add mayonnaise and grated cheese. Divide the rich filling among the tartlets and sprinkle the tops with chopped, pre-roasted walnuts. Place a quarter of a nut on top.

Portioned hot snacks in tartlets

The most popular hot filling for ready-made tartlets is julienne. It can be purely mushroom, with the addition of chicken, meat, fish or mussels. We have already talked about how to prepare julienne; you can use any of those recipes as a basis.

Julien. Cut one chicken breast into strips and fry, add two chopped onions and 500 g of champignons - fry everything well so that the water evaporates. Pour in 200 g of sour cream and simmer the mixture for 10 minutes over low heat. Let the filling cool. Before serving, preheat the oven, arrange among tartlets (you need 12 for this serving), sprinkle with cheese and bake until the crust is golden brown. Serve immediately, garnished with herbs.

Hot potato and bacon filling- nourishing and original. Fry thin slices of three potatoes and one onion. Cut 200 g of bacon into strips and place them crosswise in each basket.     1 tbsp. grated hard cheese + 1 clove of garlic + 4 pineapple rings + 1 tbsp. l. mayonnaise. Cut the pineapples into small cubes, pass the garlic through a press. Mix all the ingredients.

  5. Avocado cream
    1 avocado + 2 tbsp. l. lemon juice + 1 tbsp. l. olive oil + 2 tbsp. l. curd cheese + basil greens. Peel the avocado, chop the pulp and sprinkle with lemon juice. Place in a blender bowl with the rest of the ingredients and grind.

  6. Salmon and curd cheese
    100 g lightly salted salmon + 100 g cottage cheese + herbs + lemon. Cut the salmon into small cubes, mix the cheese with chopped herbs. Place the cheese mixture on the bottom of each tartlet and a few pieces of fish on top. Garnish the composition with a thin slice of lemon.

  7. Chicken with bell pepper
    300 g boiled chicken fillet + 1 bell pepper + 1 fresh cucumber + 2 tbsp. l. mayonnaise. Cut the chicken fillet and bell pepper into small cubes. Peel the cucumber and chop it too. Season with mayonnaise.

  8. Cod liver with eggs
    1 jar of cod liver + 2 boiled eggs + 2 small pickles + 1 red onion + 2 tbsp. l. mayonnaise. Mash the liver with a fork, chop the eggs, onions and cucumbers as finely as possible. Mix all ingredients and season with mayonnaise.

  9. With eggs and radish
    5 eggs + 1 radish + 2 sprigs of green onions + 2 tbsp. l. mayonnaise. Chop the boiled eggs, grate the radish, and chop the onion finely. Mix everything, season with mayonnaise. Garnish the tartlets with thin slices of fresh cucumber.

  10. With mushrooms and cheese
    200 g champignons + 100 g hard cheese + 100 g canned corn + dill + 1 clove of garlic. Chop the mushrooms finely, fry in a small amount of vegetable oil, grate the cheese, chop the herbs and garlic. Mix everything, season with mayonnaise.

Ingredients for 8-10 tartlets:
2 processed cheeses,
1 carrot,
2 cloves of garlic,
mayonnaise, herbs, salt, pepper - to taste.

Preparation:
Grate the carrots and cheese, chop the herbs and garlic. Combine all ingredients, season with mayonnaise, salt, pepper and mix. Fill the tartlets with filling and decorate.

Salmon tartlets

Ingredients:
salmon slicing,

Preparation:

Ingredients:
1 can of canned tuna,
2 tomatoes
2 boiled eggs,
300 g canned corn,

Preparation:

Preparation:
Finely chop the mushrooms, onions and breast and fry in vegetable oil until the excess liquid evaporates. Then add the cream and slowly add the flour until the mixture thickens. Place the filling among the tartlets, sprinkle grated cheese on top and bake in the oven until golden brown.

Cut the peeled potatoes into slices and fry them together with one finely chopped onion in butter. Divide the second onion in half: cut one half into rings, the second into small cubes. Cut the bacon into strips. Place 2 strips in the form of a cross in each tartlet, place potatoes in the center of each cross, salt, pepper, and garnish with an onion ring. Then tie the potatoes and onions with strips of bacon crosswise and bake in an oven preheated to 180°C for 10 minutes.
