Fresh homemade bread with a delicious crispy crust and a crazy aroma of whole grain flour. This is a godsend - bread without premium flour and without yeast, which is very important for me when choosing bread. You can experiment with bread endlessly, adding different types of flour and different seeds and grains. For breakfast, soups, sandwiches - this bread is perfect everywhere. For sweet sandwiches, use less salt and remove the garlic. The bread can be easily stored for 2-3 days and does not go stale.

These ingredients make bread weighing 400 g.

Mix eggs with butter and cottage cheese. Season with salt and add dry garlic if necessary. Mix flour with baking powder and add to the curd mass. Knead soft dough. It shouldn’t stick too much to your hands, but you don’t need to make it very dense, otherwise the bread will turn out very dry.

Form the dough into future bread. Make several cuts with a knife. Sprinkle with sesame seeds. You can also divide the dough into 4-5 parts and make small whole grain buns.

Preheat the oven to 180C. Place the bread in the oven and bake for 50-60 minutes. Then reduce the temperature to 160C and bake for another 20 minutes. Check readiness with a toothpick. If it comes out almost dry from the middle of the bread, then the bread is ready. After turning off the oven, I let the bread sit in there for another 10 minutes. Of course, it is important to keep an eye on the crust. It should be slightly firm and crispy, but not burnt.

Remove the bread from the oven and let it cool. It is better to store cooled bread in a bag so that the crust does not dry out at all. You can extend the shelf life of this homemade bread by storing it in the refrigerator.

Bon appetit and good mood!

Adding cottage cheese to bread significantly improves the crumb structure. It turns out lush, aromatic and moist.
The bread has a finely porous flesh and a thin crust.
There is a slight sweetness in the taste, so bread with the addition of 1 tablespoon of sugar can be classified as dessert. If you reduce the amount of sugar to 1 teaspoon, you will get white bread with a standard taste.
You can't feel the cottage cheese when eating it.
A big plus is that bread with added cottage cheese does not go stale for a long time.
There is a nuance when cooking. It is advisable to use smooth rather than grainy cottage cheese. In the second case, the grains tear the dough and deform the crust.

Rolling occurs from the middle of the rope with both hands, with weak pressure in the middle and with increasing pressure and stretching the dough towards the ends of the rope.

Twist the ends of the rope so that the shape resembles a loop. The ends can be twisted around each other from 1 (simple crossing) to 3 times.

cottage cheese - 200 g;

vegetable oil - 1 tbsp. l.;

dry yeast - 1.5 tsp;

Set the baking mode to "White bread" or "Basic", baking time - 3 hours 20 minutes, loaf weight - 750 grams, crust color - medium. Control the formation of the bun; it should be soft, elastic and not stick to the walls of the bucket. If you knead by hand: dilute the yeast in 50 ml of warm water and leave for 10 minutes to rise. Then pour 200 ml of warm kefir into a deep bowl, add suitable yeast and vegetable oil. Add salt, sugar and turmeric, add cottage cheese. Stir lightly, then add flour, knead into a soft dough and leave in the bowl for 1-1.5 hours to rise. Then knead the dough well and form bread. Let the dough rise a little, and then bake for 45-50 minutes on a baking sheet lined with parchment paper in a preheated oven at 180 degrees.

If you are preparing cottage cheese bread in a bread maker, then cool the baked bread slightly, then remove it from the bucket and cool completely on a wire rack. Bread made with the addition of cottage cheese turns out incredibly tasty.
